Ramen noodles cannot be made without the essential ingredient known as Kansui Powder. This alkaline solution is mixed with water and then added to flour to create the dough for fresh ramen noodles. Kansui Powder is responsible for the distinctive flavor, texture, and color of ramen.
The Ramen Supply Company offers four different mixes of Kansui Powder, each tailored to produce a specific type of noodle.
Type 1 Kansui Powder is recommended for creating a thicker noodle that is chewy but not overly firm. This mix is composed of 100% Sodium Carbonate.
For a medium-sized noodle with a balanced chewiness and firmness, Type 2 Kansui Powder is the recommended choice. This mix contains 60% Potassium Carbonate and 40% Sodium Carbonate.
Type 3 Kansui Powder is designed for producing a thin noodle with lower hydration. This mix, consisting of 80% Potassium Carbonate, 15% Sodium Carbonate, and 5% Sodium Phosphates, results in a firmer bite and improved water absorption and retention, making the dough easier to work with and less susceptible to drying out.
It is crucial to dissolve the Kansui Powder in water before adding it to the flour to create the fresh ramen noodle dough. This ensures the alkaline properties of the Kansui Powder are evenly distributed throughout the dough, resulting in the desired flavor, texture, and color characteristics of the final ramen noodles.
